8-INCH CHEF'S KNIFE -- $250
Full-tang, high carbon steel or stainless steel chef's knife with an 8-inch blade
For each inch over 8, add $25. A 9-inch-blade chef's knife would be $275.
For each inch under 8, subtract $25. A 7-inch chef's knife would be $225.
The price for all knives increases for more complex handle designs (e.g. hidden tang), for a Damascus steel blade, or for a differentially hardened blade.
6.5-INCH BONING KNIFE -- $200
Full-tang, high carbon steel or stainless steel boning knife with an 6.5-inch blade
For each inch over 6.5, add $25.
The price for all knives increases for more complex handle designs (e.g. hidden tang), or for a Damascus steel blade.
HANDLE DESIGN AND HANDLE MATERIAL
Broadly speaking, my full-tang knives have two styles of handles: Handles with a convex belly or handles with a concave belly. Some people prefer one style over the other. Some people are fine with either.
I use a variety of wood for my handles, including cocobolo, ziricote, bocote, katalox, olivewood, rosewood, walnut, apple, spalted elm, cherry, maple, plum, black locust, and more. If you have a wood preference or a general color preference, let me know.
I can also use Micarta as a handle material if you're looking for a durable man-made material.
ADDITIONAL KNIFE STYLES
I've provide specific pricing for chef's knives and boning knives. However, I do make a variety of additional styles of cutlery and butcher knives. Let me know if you're interested one of the following knives:
